Coming home to cook dinner has always been one of my favorite things. After my glorious road trip, I’m trying to be good so tonight’s dinner is cauliflower fried rice w sautéed carrots, bell peppers & cabbage topped w sweet chili sauce and cilantro.

With the snow a too recent memory, I’ve been craving color and have been drawn to anything bright. This evening’s sunset was brilliant. As were the flowers and peppers at the grocery.
This weekend Coe and I got out for a walk while it was warm. For being such a gorgeous weekend, we managed to find some moments of silence at the park.
This was the other evening at sunset. When I snapped this, I was drawn to the clouds. After looking at it on the screen, it looked like a mysterious tunnel to another story.
It was 50 degrees when I got up this morning with a high of 60. Tomorrow evening we are supposed to get back down to the 20’s with another winter storm coming in. My downstairs neighbor keeps their apartment so warm, I had to turn on my air conditioning today! And my office is… I’ve told y’all what a hot mess that place is. I have to dress for summer when I’m in there and the woman next to me has on a space heater!
All I wanted tonight when I got home was a bowl of something comforting. Whole wheat pasta, sauteed chicken with homemade pasta sauce, zucchini, and mixed greens with a dusting of parmesan. Now I can really veg this evening!

Mondays have been my day off lately. It’s really turned into pajama day. Thanks goodness for pilates in the evening or I may never leave the house. I’ve only been shopping as needed since I got back from vacation so I’ll eat more fresh veggies. On my way to pilates I stopped and got a few things so as soon as I got home I could make a quick dinner.
This dinner was one of my best curries ever! I looked at the ingredients list on a jar of curry sauce on the store shelf and realized I had everything I need to make my own. So that’s what I did. Crazy easy and super yummy.
1-2t Rogan Josh
1-2T curry powder
1-2t ground cumin
toss in a pot and warm on medium until they are fragrant (about a minute)
3 cloves garlic smashed or pressed
2T fresh minced ginger
1 small can tomato sauce
1/2- 3/4 14z can stewed tomatoes + some of the juice
2T coconut cream powder
1/4 head cauliflower, chopped
1 can baby peas
1 bell pepper, chopped
1/2 acorn squash cubed (baked while I was on my walk earlier)
1/2ish cup heavy cream
simmer while rice cooks
The only thing I’d change is to make it a bit spicier next time, but this will definitely get repeated! Enjoy
