Grillin’ while chillin’

We are having some of the most gorgeous weather.  Not a cloud in sight, but it is COLD!  The morning started with a good layer of frost and then as the sun came out, it warmed up to a balmy 41*.

Since I didn’t get to my to-do list when my December vacation took a turn for the worse, I decided I would spend a little time in the yard on my MLK Monday off.  I spent the day smoking two (yes 2!) pork shoulders.  My vertical drum smoker took a little more baby sitting than in the prime of summer since we started in the dark when it was 31*.

I mostly smoked these to babies to stock my freezer, but of course I had to enjoy some right off the grill.  There is nothing better than fresh off the grill, melt in your mouth, pork shoulder.  I can easily be gluttonous standing in the kitchen and eat most of it right there.  But tonight, I made mini pulled pork sliders.  I love sliders, it’s built in portion control.

the chicken made me do it

To continue yesterday’s story of the chicken that could mend moods…

I ate my rotisserie chicken legs over the sink as any single gal would.  Don’t you know?  You don’t absorb as much fat if you eat standing up and you burn more calories.  It’s a fact. 😉 So, after dinner, I stripped the rest of the meat off the bird and did a rough chop, bites not too small, but not very big.

I was planning on the girls hanging out in the backyard on a gorgeous evening having buffalo chicken sliders for dinner.  I loosely followed a recipe that a friend sent me a few years ago.  I’ve made it several times before, never really following the recipe.  While the original recipe is a dip, I made it a bit thicker, knowing it was going to be sandwich filling.

Here’s what I did this evening:
Warm 1 block cream cheese in the microwave about 30 seconds, just to soften it.
Add 1/2 cup blue cheese crumbles (because that’s what was in the fridge)
1/4-1/3 cup blue cheese dressing
1/2-3/4 cup Frank’s Hot Sauce (or as much as you want)
chopped rotisserie chicken

When I got home the next afternoon, I pulled it out of the fridge and stirred in a touch more hot sauce. I served these on the small potato rolls. I cut them in half and put about a generous dollop in each roll. I made up 10 and still have plenty of chicken mixture left for 3-4 more.

Good thing I kept some aside, the girls ate them up.  Now, I have something for lunch this weekend.

In keeping with the provenance of this chicken, I started my morning with a good deed.  There is a Starbucks in the lobby of my building.  My building just happens to be near a police station.  I filled up a Starbucks card for them to buy coffee for the cops.  Yes ossifer, you have to thank the chicken.
