Coe cookies

There was a time when I baked only for one. I had no trust in my baking skills and I knew this one would never complain. Sure enough every time I pulled out flour and a cookie sheet I would have company in the kitchen. Boy times have changed.

I am now regularly baking bread, muffins or pizza dough. I still have company in the kitchen, but very quickly my assistant gets bored and leaves me. There are still plenty of days I bake for my lovely friend, my dog, Coe (like Zoe).

Today’s baking was all for her. Peanut butter banana carob chip cookies!

2 cups flour
1/4 cup(ish) peanut putter
1 very ripe banana, smashed thoroughly
1/4-1/2 cup carob chips
enough water to make a medium stiff dough. add and stir until you get about the consistency of oatmeal cookies.

drop by the teaspoon or smaller onto a lightly greased baking sheet. Bake at 375 for 15-18 minutes or until lightly golden.

Now, here’s what a mean mommy I really am 😉 and how crazy smart she is.
